At The Gunter Hotel, we’re manifesting a Creator’s Salon—a destination that inspires the creator inside all of us to compose their own San Antonio story. Jots embraces this brand platform by encouraging guests to find their muse and jot down lyrics, ideas, and creative sparks inspired by their stay. When the hotel, in its current form, was built in 1909, it was named after Jonathan “Jot” Gunter, a local rancher and real estate developer who helped finance the property. According to historians, Jot lived a life that was “multi-faceted, multi-dimensional. He drew from the flower of life every bit of nectar he could.” This historical connection brings our name full circle—rooted in creativity, expression, and the enduring spirit of inspiration.
Led by Passion, Rooted in Hospitality
At the heart of our restaurant is a shared commitment to hospitality, creativity, and exceptional flavor, led by Food & Beverage Director Chef Sarah R. Myles. Raised in Seattle, Chef Sarah discovered her passion for food through early trips to Pike Place Market with her father and countless hours spent experimenting with recipes from culinary icons like Julia Child, Jacques Pépin, and Thomas Keller. Her philosophy is rooted in love and intention: “Every plate in my kitchen is for my mommy. If it’s not good enough for my mommy, then it’s not good enough for my kitchen.” This devotion has carried her through a dynamic culinary journey across the country, where she’s refined her technique, embraced diverse flavors, and built a reputation for heartfelt, ingredient-driven cuisine. Off the clock, Sarah enjoys time with her three beloved pups—Honey, Roux, and Nori—each affectionately named after ingredients.
Joining her at the helm is Executive Chef Hayley Unruh, whose talent and precision help bring the menu to life with a deep respect for seasonal ingredients, local sourcing, and bold yet balanced flavor. Also part of the leadership team is Nicholle Purnell, Director of Outlets, whose operational expertise and passion for guest experience ensure every visit is smooth, memorable, and rooted in genuine hospitality. Together, they create a dining experience that honors both tradition and innovation- a place that feels personal, approachable, and distinctly driven by passion.
